Mother's Day Breakfast-in-Bed BONA FIDE BITES!

 

Breakfast in bed is a luxurious moment of self-care that any mum appreciates waking up to on Mother's Day (or her birthday, an anniversary, or on any other special occasion!).

Citrus Salad

Preparing a fresh fruit salad is an easy and delicious option for any health-conscious Mumma and her new-to-breakfast-making sprog(s).

INGREDIENTS

3 red grapefruits

3 navel oranges

1 lime

1 punnet of blueberries

DIRECTIONS

Cut the peel and white pith from grapefruits and oranges. Working over a bowl, cut the grapefruits and oranges into segments or pieces.

Finely grate the zest of half of lime over the citrus, then squeeze 1 tablespoon of juice over the top. Gently toss with blueberries.

Serve on its own or with yogurt.


Sunny-Side-Up Pizza

If mum enjoys sleeping in on the weekends, opt for this heartier pizza dish, which makes for the perfect brunchtime treat.

INGREDIENTS

450g pizza dough (thawed overnight if frozen)

1 tbsp. Dijon mustard

120g Gruyère, coarsely grated

120g thinly sliced deli ham

1 bunch spinach, thick stems discarded

4 large eggs

Green salad, for serving

Polenta, for the baking sheet

Flour, for the surface

DIRECTIONS

Heat oven to 230°C. Lightly dust a large baking sheet with polenta. On a lightly floured surface, shape pizza dough into a 16" oval or circle. Place on a prepared sheet.

Spread mustard over dough, then sprinkle with 90g of cheese. Top with ham, spinach and remaining 30g of cheese.

Working with one egg at a time, crack eggs into a small bowl, then slide onto pizza. Bake until egg whites are set and the crust is golden brown, 15 to 17 minutes. Serve with a salad, if desired.

 

Tips & Techniques

Sprinkling the pan with polenta keeps the dough from sticking and gives the crust that crunchy pizza-parlour texture. Don't have any on hand? Place your pie on parchment paper instead.


Homemade Waffles

Homemade waffles make a great and easy breakfast topped with fruit, syrup or yoghurt, or they can sub in for any meal with ham, cheddar and/or egg combo!

INGREDIENTS

350g. plain flour

1 tbsp. baking powder

1/2 tsp. salt

2 large eggs

350ml whole milk

2 tbsp. unsalted butter

DIRECTIONS

In a medium bowl, whisk together the flour, baking powder, and salt.

Using an electric mixer, beat the egg whites until stiff peaks form, 2 to 3 minutes; set aside.

In a large bowl, whisk together the egg yolks, milk, and butter. Add the flour mixture, stirring just until incorporated. Gently fold in the whites until no streaks remain.

Cook in a waffle maker according to the manufacturer's instructions until golden brown. 

Serve with your favourite toppings.

Tips & Techniques

Make-Ahead: Enjoy waffles anytime by freezing a batch. Allow waffles to cool completely, then freeze on baking sheets between layers of parchment paper until firm. Transfer to an airtight container or resealable plastic bag and freeze for up to 2 months. To reheat, place on a wire rack and bake at 175°C until crisp, about 10 minutes. 

 

Top It Off

Ham, Egg + Cheddar: Prepare the waffles as directed. Top each waffle with 1 slice of ham, 2 slices of tomato, a fried egg and 1 tablespoon of grated cheddar. 

Strawberry-Honey: Prepare the waffles as directed. Top each with 100g of yoghurt and 50g of strawberries (sliced), then drizzle with 2 teaspoons of honey.
